Ingredients
- 2 Sweet Potatoes, peeled and cubed
- 1 large Onio, chopped
- 2 Zucchini, thickly sliced
- 5 Tomatoes
- 15 oz garbanzo beans, undrained
- 1/2 cup of couscous
- 1/4 cup of Raisins
- 1 tablespoon Ground Coriander
- 1/2 tablespoon Ground Turmeric
- 1/2 tablespoon Ground Cinnamon
- 1/2 tablespoon Ground Ginger
- 1/4 tablespoon Ground Cumin
- 3 cups of water
Recipe method
Combine all ingredients in a large saucepan. Boil and lower heat, and simmer until the vegetables are tender, about 30 minutes.
