Ingredients
To make Banana Muffins, you'll need:
  • 200g of bananas, ripened and mashed 
  • 100g of self raising flour 
  • 100g of almond flour 
  • 2 eggs 
  • 60 ml of water 
  • 2 tsp. of sweetener 
  • 100ml of unsweetened apple juice 
  • 1 tsp. vanilla extract 
  • 1 tsp. cinnamon 
  • 2 tsp. baking powder 

Method

  • Preheat oven to Gas Mark 5 or 175°C.
  • Grease a muffin tin or place muffin liners on a baking tray.
  • Mix all the dry ingredients (the self-raising flour, almond flour, sweetener, cinnamon, and baking powder).
  • Add all the wet ingredients (the bananas, eggs, water, apple juice, and vanilla extract).
  • Mix them together thoroughly.
  • Put the resultant mixture in the muffin tins so that each one is half full.
  • Bake for 20 minutes, and allow to cool before serving.
