Banana Muffins

Ingredients
To make Banana Muffins, you'll need:
- 200g of bananas, ripened and mashed
- 100g of self raising flour
- 100g of almond flour
- 2 eggs
- 60 ml of water
- 2 tsp. of sweetener
- 100ml of unsweetened apple juice
- 1 tsp. vanilla extract
- 1 tsp. cinnamon
- 2 tsp. baking powder
Method
- Preheat oven to Gas Mark 5 or 175°C.
- Grease a muffin tin or place muffin liners on a baking tray.
- Mix all the dry ingredients (the self-raising flour, almond flour, sweetener, cinnamon, and baking powder).
- Add all the wet ingredients (the bananas, eggs, water, apple juice, and vanilla extract).
- Mix them together thoroughly.
- Put the resultant mixture in the muffin tins so that each one is half full.
- Bake for 20 minutes, and allow to cool before serving.
