Ingredients
To make Bed Of Green Lentils, you'll need:
  • 1 tsp Olive oil
  • 1 cup Diced onion
  • 2 tbsp Chopped garlic
  • 2 cup Diced carrots
  • 4 cup Dried lentils preferably Le Puy
  • 2 Sprigs fresh thyme
  • 1 Bay leaf
  • 1/8 tsp Ground cloves Salt and pepper

Method

  • Heat the oil in a large skillet over medium heat.
  • Add the onion and garlic saute until tender and translucent.
  • Add the carrot and continue to cook stirring frequently until lightly carmelized.
  • Add the lentils thyme bay leaf and cloves and cover with 1" of water.
  • Reduce the heat and simmer for 15-20 minutes until tender.
  • Add more water as needed.
  • Remove from heat.
  • Season to taste and serve immediately
