To make Bell Pepper and Chicory Salad, you'll need:
  • 3 heads of chicory, finely sliced 
  • 1 yellow bell pepper, finely sliced 
  • 1 red bell pepper, finely sliced 
  • 2 new potatoes, cooked and finely sliced 
  • 2 tbsp. of coriander, finely chopped 
  • 2 tsp. of grainy mustard 
  • 1 tbsp. balsamic vinegar 
  • 2 tbsp. of lemon juice 
  • 3 tbsp. of extra virgin olive oil 
  • Salt and freshly ground black pepper to season

Method

  • Combine the lemon juice, balsamic vinegar and mustard. 
  • Then slowly stir in the olive oil.
  • Season to taste.
  • Combine all the dry ingredients in a bowl.
  • Add the vinaigrette and enjoy!
