Bell Pepper and Chicory Salad

Ingredients
To make Bell Pepper and Chicory Salad, you'll need:
- 3 heads of chicory, finely sliced
- 1 yellow bell pepper, finely sliced
- 1 red bell pepper, finely sliced
- 2 new potatoes, cooked and finely sliced
- 2 tbsp. of coriander, finely chopped
- 2 tsp. of grainy mustard
- 1 tbsp. balsamic vinegar
- 2 tbsp. of lemon juice
- 3 tbsp. of extra virgin olive oil
- Salt and freshly ground black pepper to season
Method
- Combine the lemon juice, balsamic vinegar and mustard.
- Then slowly stir in the olive oil.
- Season to taste.
- Combine all the dry ingredients in a bowl.
- Add the vinaigrette and enjoy!
