To make Candied Yams, you'll need:
  • 600 lg Yams or sweet potatoes Butter-flavor cooking spray 050 c Brown sugar substitute 050 c Diabetic maple-flavor syrup 050 ts Grated lemon zest(optional 013 ts Ginger(optional) 025 c Diet margarine

Method

  • Cook yams in boiling water until almost tender
  • Drain and cool until you are able to handle them
  • Peel yams and cut lengthwise into quarters
  • Place yams in shallow baking dish coated with butter-flavored baking spray
  • In small saucepan combine artificial brown sugar maple syrup lemon zest and ginger
  • Heat on low flame stirring constantly until well blended but not boiling
  • Pour mixture over yams and dot with margarine
  • Bake in preheated 375F oven approximately 20 minutes basting with syrup until well glazed
  • Serve with glaze poured over
