Cashew and Cheese Flapjacks

Ingredients
To make Cashew and Cheese Flapjacks, you'll need:
- 75g butter
- 100g cashew, chopped
- 1 medium carrot
- 175g grated medium cheddar cheese
- 175g porridge oats
- 1 large free range egg, lightly beaten
Method
- Preheat the oven at Gas Mark 4 or 180°C. Lightly grease an 8 inch by 8 inch baking tray.
- In a medium sized saucepan, melt the butter on a low heat.
- Take the butter off the heat and mix in the cashews, carrot, cheese, oats and egg, stirring thoroughly.
- Spoon the mixture into the tin and smoothen the mixture with a spatula.
- Next, pop the flapjacks in the preheated oven and bake for 30-35 minutes.
- Remove the baking tray from the oven and let the flapjacks cool down on a wire tray.
- Cut into 18 slices and tuck in!
- A truly delicious snack!
