To make Cashew and Cheese Flapjacks, you'll need:
  • 75g butter
  • 100g cashew, chopped
  • 1 medium carrot
  • 175g grated medium cheddar cheese
  • 175g porridge oats
  • 1 large free range egg, lightly beaten

Method

  • Preheat the oven at Gas Mark 4 or 180°C. Lightly grease an 8 inch by 8 inch baking tray.
  • In a medium sized saucepan, melt the butter on a low heat.
  • Take the butter off the heat and mix in the cashews, carrot, cheese, oats and egg, stirring thoroughly.
  • Spoon the mixture into the tin and smoothen the mixture with a spatula.
  • Next, pop the flapjacks in the preheated oven and bake for 30-35 minutes.
  • Remove the baking tray from the oven and let the flapjacks cool down on a wire tray.
  • Cut into 18 slices and tuck in! 
  • A truly delicious snack!
