Cheesy Stuffed Mushrooms with Tomato

Ingredients
To make Cheesy Stuffed Mushrooms with Tomato, you'll need:
- 8 large Portobello mushrooms
- 4 cloves garlic, crushed
- 1tbsp. wholegrain Dijon mustard
- 220g cheese grated
- 75g breadcrumbs
- 3 tbsp. double cream
- Fresh curly parsley, finely chopped
- Salt and freshly ground pepper to taste
Method
- Mix the garlic, mustard, cheese, cream, breadcrumbs and parsley together.
- Season with salt and freshly ground pepper.
- Preheat the oven to Gas Mark 4 or 180ºC.
- Drizzle the olive oil on the mushrooms with olive oil and bake in the preheated oven for 15 minutes.
- Take out the mushrooms from the oven and fill each one with the breadcrumbs.
- Finish by grilling until golden.
- Sprinkle with chopped parsley and freshly ground black pepper.
