Ingredients
To make Duck Wraps, you'll need:
- 3 Chillies, finely chopped
- 2 tsp. fresh ginger, minced
- 2 garlic cloves, finely chopped
- 4 spring onions, finely chopped
- 1 large carrot, finely chopped
- 1 tbsp. soy sauce
- 1 tbsp. sweet chilli sauce
- 1 tbsp. agave nectar
- 4 tbsp. mirin
- 2.5 tbsp. olive oil
- 400g cooked duck breast
- 4 large lettuce leaves
Method
- Pop a tablespoon of the olive oil in a large saucepan on a medium heat. Fry each breast for 3-4 minutes on each side.
- Place the chillies, ginger, garlic, chilli sauce, agave nectar and mirin in a medium sized saucepan on a medium heat. Cook for 5 minutes, stirring throughout, until you have a thick sauce.
- Wash the lettuce leaves and dry them. Pat the leaves dry and leave aside.
- Heat the half tablespoon of olive oil in a non-stick frying pan on medium heat.
- Throw in the chopped carrots and spring onions and cook for 2 minutes. Then add the duck meat and cook for another 2 minutes.
- Finally, pour on the sauce and cook for another 2 minutes.
- To plate up, lay out two lettuces on a plate per person and heap some of the duck mixture in the middle.
- Eat straight away. Hmmm, delicious!
