Ingredients
To make Duck Wraps, you'll need:
  • 3 Chillies, finely chopped
  • 2 tsp. fresh ginger, minced
  • 2 garlic cloves, finely chopped
  • 4 spring onions, finely chopped
  • 1 large carrot, finely chopped
  • 1 tbsp. soy sauce
  • 1 tbsp. sweet chilli sauce
  • 1 tbsp. agave nectar
  • 4 tbsp. mirin
  • 2.5 tbsp. olive oil
  • 400g cooked duck breast
  • 4 large lettuce leaves

Method

  • Pop a tablespoon of the olive oil in a large saucepan on a medium heat. Fry each breast for 3-4 minutes on each side.
  • Place the chillies, ginger, garlic, chilli sauce, agave nectar and mirin in a medium sized saucepan on a medium heat. Cook for 5 minutes, stirring throughout, until you have a thick sauce.
  • Wash the lettuce leaves and dry them. Pat the leaves dry and leave aside.
  • Heat the half tablespoon of olive oil in a non-stick frying pan on medium heat. 
  • Throw in the chopped carrots and spring onions and cook for 2 minutes. Then add the duck meat and cook for another 2 minutes.
  • Finally, pour on the sauce and cook for another 2 minutes.
  • To plate up, lay out two lettuces on a plate per person and heap some of the duck mixture in the middle.
  • Eat straight away. Hmmm, delicious!
