To make Falafel Burgers on Pitta Bread, you'll need:
  • 200g tinned chickpeas, rinsed and drained
  • 1 red onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 10g flat leaf parsley
  • 2 tsp. ground cumin
  • 1 tsp. ground coriander
  • 2.5 tbsp. plain flour
  • Salt to taste
  • 2.5 tbsp. olive oil
  • 4 toasted pitta breads
  • 200g tub tomato salsa, to serve

Method

  • Drain the chickpeas thoroughly.
  • Place the chick peas, red onion, garlic, parsley, ground cumin, ground coriander, flour and salt to taste in a food processor, and whizz the mixture until it is smooth.
  • Shape the mixture into four patties with your hands.
  • Pour the olive oil into a non-stick frying pan and place over a medium heat. 
  • When it’s warm, fry the burgers for 3 minutes on each side, ensuring that they are golden brown.
  • Serve on a toasted pitta, with tomato salsa and/or a green salad and savour!
