Ingredients
To make Fish and Chips, you'll need:
- 1 level tsp. salt
- 100g ground almonds
- ¼ tsp cayenne pepper
- 2 large free range eggs, beaten
- 400g skinned cod fillets
- 2 tbsp. olive oil for shallow frying
- Lemon wedges to serve with if wanted
To make Celeriac Fries, you'll need: - 900g celeriac
- 3 tbsp. olive oil
- Fine sea salt, for seasoning
Method
Fish:- Place salt, ground almonds and cayenne pepper in a bowl and combine.
- Pour the beaten eggs in a separate bowl
- Dip the fish into the beaten eggs and then into the almond mix. Set aside.
- Heat 2 tbsp olive oil in a frying pan. Fry the fish for 2 minutes on the first side until golden brown, then 2 minutes on the other side.
- Place on kitchen towel to drain any excess oil from the fish. Serve with lemon wedges and celeriac chips.
Celeriac Fries:
- Preheat the oven to 200C or Gas Mark 6.
- Peel the celeriac, slicing off the top and bottom as well as down the sides with a heavy, sharp knife to remove the tough skin.
- Cut the celeriac into the shape of fries, then spread them evenly on a baking tray.
- Drizzle with olive oil and season with salt and pepper.
- Bake the chips for 30-40 minutes until brown and crispy, turning them halfway through and serve. Alternatively, they can be eaten cold.
