Ingredients
To make Fish and Chips, you'll need:
  • 1 level tsp. salt
  • 100g ground almonds
  • ¼ tsp cayenne pepper
  • 2 large free range eggs, beaten
  • 400g skinned cod fillets
  • 2 tbsp. olive oil for shallow frying
  • Lemon wedges to serve with if wanted
To make Celeriac Fries, you'll need:
  • 900g celeriac
  • 3 tbsp. olive oil
  • Fine sea salt, for seasoning

Method

Fish:
  • Place salt, ground almonds and cayenne pepper in a bowl and combine.
  • Pour the beaten eggs in a separate bowl
  • Dip the fish into the beaten eggs and then into the almond mix. Set aside.
  • Heat 2 tbsp olive oil in a frying pan. Fry the fish for 2 minutes on the first side until golden brown, then 2 minutes on the other side. 
  • Place on kitchen towel to drain any excess oil from the fish. Serve with lemon wedges and celeriac chips.

Celeriac Fries:
  • Preheat the oven to 200C or Gas Mark 6.
  • Peel the celeriac, slicing off the top and bottom as well as down the sides with a heavy, sharp knife to remove the tough skin.
  • Cut the celeriac into the shape of fries, then spread them evenly on a baking tray.
  • Drizzle with olive oil and season with salt and pepper.
  • Bake the chips for 30-40 minutes until brown and crispy, turning them halfway through and serve. Alternatively, they can be eaten cold.
