Ingredients
To make Gazpacho Soup, you'll need:
  • 1 lb plum tomatoes peeled seeded
  • 1 cup cucumber peeled seeded and diced
  • 1/2 jalapeño pepper seeded diced
  • 1/2 medium red onion diced
  • 1/4 bunch cilantro chopped
  • 1 can tomato juice - (45 oz)
  • 1/2 tsp hot pepper sauce
  • 1/4 tsp salt

Method

  • Combine all ingredients in a food processor and blend until smooth
  • Add more salt if needed
  • Refrigerate for 1 hour before serving.
