Lentil and Quinoa Salad

Ingredients
To make Lentil and Quinoa Salad, you'll need:
FOR THE DRESSING: - 2 tsp. Dijon mustard
- 1.5 tbsp. red wine vinegar
- 3 tbsp. extra virgin olive oil
- 2 garlic cloves, minced
- Zest of a lime
- Salt and pepper
FOR THE SALAD: - 400ml water
- 120g quinoa
- 120g tinned lentils
- 2 spring onions, chopped
- 100g cherry tomatoes, halved
- A handful of fresh coriander, chopped
Method
FOR THE DRESSING:- Mix the Dijon mustard, red wine vinegar, and olive oil in a small bowl.
- Add in the garlic, lime zest, salt, and pepper, to finish the dressing.
FOR THE SALAD: - Place 400ml of water in a medium-size saucepan along with the uncooked quinoa.
- Bring the water to the boil, then lower the heat, and allow to simmer for 15 minutes.
- Then, place the lentils in a saucepan of water, bring to the boil, lower the heat, and simmer for 5 minutes.
- Drain the lentils and place to one side to cool.
- Combine the quinoa, lentils, spring onions, cherry tomatoes, and coriander in a salad bowl.
- Drizzle on the dressing, toss the salad in the dressing and serve.
