Ingredients
To make Milk Pudding, you'll need:
  • 4 tsp. vegetable oil
  • 1 tsp. agar agar
  • 220g double cream
  • 250ml whole milk
  • 25g Stevia
  • 75g buttermilk
FOR THE SYRUP:
  • 75g Stevia
  • 75ml boiling water
  • Juice of a blood orange
  • 4 drops of rose water

Method

  • Put the milk and buttermilk into a lrge bowl.
  • Then, grease 4 dariole moulds with the vegetable oil and pop on a tray.
  • Place the double cream into a small pan on a low heat. Mix in the stevia until it dissolves totally.
  • Then, turn the heat up and boil the cream for 2 minutes.
  • Mix the agar agar into the cream mixture.
  • Next, pour the cream mixture onto the milk and buttermilk and pour into the dariole moulds/
  • Once the mixture has cooled down, place in the fridge to chill overnight.
FOR THE SYRUP:
  • Combine the Stevia, boiling water, juice of the blood orange and rose water i a bowl.
  • Stir until the Stevia has totally dissolved.
  • When you are turning out the milk puddings, pop a blunt knife around the edges of the moulds and turn out onto 4 plates.
