Ingredients
To make Mojo Rojo, you'll need:
  • 3 large tomatoes, blanched 
  • 50g ground almonds 
  • 50ml cider vinegar 
  • 5 cloves of garlic, crushed 
  • 1 tsp. ground cumin 
  • 1 red chilli, finely chopped 
  • Olive oil to taste 
  • ¼ tsp. salt 
  • 1 tsp. freshly ground coriander

Method

  • Mix the salt, ground almonds and garlic together. 
  • Add the remaining ingredients other than the oil and mix. 
  • Then add the olive oil and mix to the consistency that you want.
