To make Oven Fried Chicken No.1 - Good, you'll need:
  • 200 Chicken breast halves
  • 600 Saltine crackers crushed
  • 200 ts Parmesean cheese 025 ts Pepper 013 ts Basil 013 ts Celery seed 013 ts Onion powder 013 ts Oregano 013 ts Paprika 013 ts Salt (optional)
  • 150 tb Evaporated skim milk
  • 100 ts Vegetable oil

Method

  • Skin chicken breasts
  • Combine cracker crumbs cheese pepper basil celery seed onion powder oregano paprika and salt in bowl
  • Dip chicken in evaporated skim milk and then coat with crumb mixture
  • Place in a lightly greased shallow roasting pan - or spray with PAM
  • Bake at 400 degrees for 30 minutes or until done
  • Brush with oil and bake 10 minutes longer
  • Makes 2 servings
  • Each serving counts as 3 lean meat 1/2 starch and 1/2 fat
  • Each serving has 260 calories
  • NOTE: If you don't like spices used - basil celery seed onion powder oregano paprika and salt and pepper - use your own blend
