Quiche Lorraine

Ingredients
To make Quiche Lorraine, you'll need:
- 320g sheet of ready to roll short crust pastry
- 100g bacon, diced
- 125ml single cream
- 150ml semi-skimmed milk
- 4 eggs, beaten
- Salt and freshly ground pepper to season
Method
- Preheat the oven to Gas Mark 5 or 190°c.
- Line a loose-bottomed flan case with greaseproof paper.
- Unroll the short crust pastry sheet onto the flan case and bake for 10 minutes. In the meantime, you need to make the filling.
- Fry the bacon pieces lightly in their own fat for 4 minutes.
- Then, drain them on some kitchen roll and pop onto the base of the pastry case.
- Heat the cream and milk to just below boiling point - just as it begins to bubble - and mix in the beaten eggs.
- Season with salt and pepper and pour into the flan case.
- Bake in the preheated oven 25 minutes.
- Allow the quiche to stand for 10 minutes before serving.
- This dish is wonderful, served hot or cold.
