To make Roasted Celeriac, you'll need:
  • 1 kg celeriac, trimmed, peeled and diced 
  • 4 tbsp. butter 
  • 4 garlic cloves, peeled 
  • Salt and freshly ground black pepper for seasoning 
  • 2 tsp. rosemary, finely chopped 
  • Some sprigs of rosemary

Method

  • Place the celeriac in a roasting pan.
  • Melt the butter in a sauce pan, add in the rosemary and garlic and cook gently until fragrant, for about 2 minutes.
  • Add the celeriac and coat it with the butter mixture. 
  • Then place the celeriac in the oven on 200°c or Gas Mark 6 and cook for up to 20 minutes until golden brown.
  • Sprinkle salt, pepper and garnish with the sprigs of rosemary and your dish is ready to serve.
