Roasted Celeriac

Ingredients
To make Roasted Celeriac, you'll need:
- 1 kg celeriac, trimmed, peeled and diced
- 4 tbsp. butter
- 4 garlic cloves, peeled
- Salt and freshly ground black pepper for seasoning
- 2 tsp. rosemary, finely chopped
- Some sprigs of rosemary
Method
- Place the celeriac in a roasting pan.
- Melt the butter in a sauce pan, add in the rosemary and garlic and cook gently until fragrant, for about 2 minutes.
- Add the celeriac and coat it with the butter mixture.
- Then place the celeriac in the oven on 200°c or Gas Mark 6 and cook for up to 20 minutes until golden brown.
- Sprinkle salt, pepper and garnish with the sprigs of rosemary and your dish is ready to serve.
