Roasted Winter Vegetables

Ingredients
To make Roasted Winter Vegetables, you'll need:
- 2 leeks
- 150g carrots
- 150g diced celeriac
- 2 red onions
- 150g swede
- 4 cloves of crushed garlic
- Garnish of dried rosemary or sprigs of fresh rosemary
- 6 tbsp. olive oil
- Salt and pepper to taste
Method
- Chop all of the vegetables (leeks, carrots, diced celeriac, red onions, and swedes) into small chunks, and place them in a large roasting tin along with the crushed garlic.
- Garnish the vegetables with rosemary and cover with the olive oil and seasoning.
- Roast in the oven on 180°c or Gas mark 4 for 45 minutes.
- Serve hot and enjoy!
