To make Roasted Winter Vegetables, you'll need:
  • 2 leeks 
  • 150g carrots 
  • 150g diced celeriac 
  • 2 red onions 
  • 150g swede 
  • 4 cloves of crushed garlic 
  • Garnish of dried rosemary or sprigs of fresh rosemary
  • 6 tbsp. olive oil
  • Salt and pepper to taste

Method

  • Chop all of the vegetables (leeks, carrots, diced celeriac, red onions, and swedes) into small chunks, and place them in a large roasting tin along with the crushed garlic.
  • Garnish the vegetables with rosemary and cover with the olive oil and seasoning.
  • Roast in the oven on 180°c or Gas mark 4 for 45 minutes.
  • Serve hot and enjoy!
