To make Spinach Dip, you'll need:
  • 1 package frozen chopped spinach - (10 oz) defrosted
  • 2 tbsp red wine vinegar
  • 3 garlic cloves minced
  • 1 tbsp minced fresh mint
  • 1 cup low-fat sour cream or non-fat yogurt excess liquid drained

Method

  • Drain excess water from the spinach by placing it in a sieve and using the back of a spoon to press out all the water
  • Combine the remaining ingredients in a small bowl
  • Mix well
  • Add the spinach and mix well
  • Serve with an assortment of raw or lightly cooked vegetables, whole-grain crackers, breadsticks, or pita wedges.
