Ingredients
To make Sweet Potato Frittata, you'll need:
  • ½ sweet potato, sliced and parboiled 
  • 5 eggs, beaten 
  • 1 tbsp. olive oil 
  • 1 medium onion, chopped finely 
  • 50ml skimmed milk 
  • 100g low fat cheddar cheese, grated 
  • ½ tsp. dried oregano 
  • ½ tsp. dried thyme 
  • ½ tsp. pepper 

Method

  • Preheat the oven at Gas Mark 4 or 200°C.
  • Put the olive oil in a medium frying pan on a medium heat. 
  • Add the onion and sweet potato and cook for 5 minutes and set aside.
  • Place the eggs in a bowl and stir the milk and cheese into it. Season with thyme, oregano, salt and pepper. 
  • Mix the sweet potato mixture in with the egg and place in an ovenproof dish and bake for 25 minutes.
