Sweet Potato Frittata

Ingredients
To make Sweet Potato Frittata, you'll need:
- ½ sweet potato, sliced and parboiled
- 5 eggs, beaten
- 1 tbsp. olive oil
- 1 medium onion, chopped finely
- 50ml skimmed milk
- 100g low fat cheddar cheese, grated
- ½ tsp. dried oregano
- ½ tsp. dried thyme
- ½ tsp. pepper
Method
- Preheat the oven at Gas Mark 4 or 200°C.
- Put the olive oil in a medium frying pan on a medium heat.
- Add the onion and sweet potato and cook for 5 minutes and set aside.
- Place the eggs in a bowl and stir the milk and cheese into it. Season with thyme, oregano, salt and pepper.
- Mix the sweet potato mixture in with the egg and place in an ovenproof dish and bake for 25 minutes.
