Walnut and Date Loaf

Ingredients
To make Walnut and Date Loaf, you'll need:
- 50g margarine
- 220g dates, finely chopped
- 2 tbsp. Triple Zero sweetener
- 1 tsp. bicarbonate of soda
- 120ml boiling water
- 60g walnuts, finely chopped
- 1 tsp. vanilla essence
- 100g self-raising flour
- 100g almond flour
- 2 eggs, beaten
- A few walnut halves for decoration
Method
- Pre-heat the oven to 160°c/Gas Mark 3.
- Put the margarine, dates, Triple Zero sweetener and bicarbonate of soda into a mixing bowl.
- Pour the boiling water over the top and leave to cool.
- Add the walnuts, vanilla essence, self-raising flour and almond flour, mixing thoroughly.
- Beat the eggs separately and add to the mixture.
- Grease a loaf tin with butter and line with greaseproof paper.
- Then pour the mixture into it and bake on the bottom shelf for 45-50 minutes.
- To check if the loaf is cooked, poke a cocktail stick (or something similarly long and thin) into it. If the stick comes out clean, the loaf is cooked.
- Leave the loaf in the tin to cool for at least 15 minutes before you remove it.
- Decorate the loaf with the walnut halves, slice, and serve!
