Ingredients
To make Walnut and Date Loaf, you'll need:
  • 50g margarine
  • 220g dates, finely chopped
  • 2 tbsp. Triple Zero sweetener
  • 1 tsp. bicarbonate of soda
  • 120ml boiling water
  • 60g walnuts, finely chopped
  • 1 tsp. vanilla essence
  • 100g self-raising flour
  • 100g almond flour
  • 2 eggs, beaten
  • A few walnut halves for decoration

Method

  • Pre-heat the oven to 160°c/Gas Mark 3.
  • Put the margarine, dates, Triple Zero sweetener and bicarbonate of soda into a mixing bowl. 
  • Pour the boiling water over the top and leave to cool.
  • Add the walnuts, vanilla essence, self-raising flour and almond flour, mixing thoroughly. 
  • Beat the eggs separately and add to the mixture.
  • Grease a loaf tin with butter and line with greaseproof paper. 
  • Then pour the mixture into it and bake on the bottom shelf for 45-50 minutes. 
  • To check if the loaf is cooked, poke a cocktail stick (or something similarly long and thin) into it. If the stick comes out clean, the loaf is cooked.
  • Leave the loaf in the tin to cool for at least 15 minutes before you remove it.
  • Decorate the loaf with the walnut halves, slice, and serve!
