Ingredients
To make Zucchini And Chilli Tomato Casserole, you'll need:
  • 1 tbsp chilli powder
  • 4 cups canned tomatoes
  • 2 crushed garlic cloves
  • 1/4 tsp oregano
  • 1/4 tsp basil
  • 4 cups sliced zucchini
  • 2 oz grated Monterey Jack cheese

Method

  • Place chilli powder, canned tomatoes, crushed garlic, oregano and basil in large saucepan.
  • Bring mixture to boil then lower heat and simmer for 20 minutes.
  • Stir in sliced zucchini.
  • Continue cooking until zucchini is tender (about 10 minutes)
  • Just before serving place ingredients in casserole and sprinkle with grated cheese.
  • Place under the grill to melt the cheese
